Eat an UnAmerican Diet to be Healthy

Scary our diet is. (Am I talking like Yoda now?) Since my son has been diagnosed with five food allergies, I have come across problems with some of the food that Americans devour gobs of. I repeatedly come across information associating wheat and milk to a large range of nasty diseases. It is speculated that nonwestern countries do not have the prevelance of the diseases Americans have because of the absence or low amounts of milk and wheat in their diets.

Diseases/problems I've seen associated with wheat - wheat allergy, autism (around age 2 to 4), multiple sclerosis, diabetes (either one), rheumatoid arthritis, schizophrenia, other autoimmune disorders, and Celiacs Disease. People with Celiacs Disease are thought to have a greater incidence of many diseases including Alzheimers and Celiacs is underdiagnosed.

Diseases/problems I've seen associated with milk - milk allergy, can flare up eczema, lactose intolerance, autism (earlier onset), Alzheimers, and a great range of autoimmune disorders including the MS and rheumatoid arthritis.

Think of all the processed foods in our diet. Milk and wheat are omnipresent. In addition to regular wheat and milk in these processed foods, casein and gluten, the allergenic components of milk and wheat are often added to improve the texture and appearance of our food. I doubt anyone could object that the amount of wheat and milk in our American diet is unnatural.

On a more personal note, my dad died from Lewy Body Dementia in November of 2005. Towards the end of his downward spiral when he was maybe a day away from never talking again I remember him asking for pancakes and milk. If dementia is related to the consumption of milk and wheat, my dad didn't have a chance. He started most of his mornings with a big bowl of raisin bran or shredded wheat sloshing with milk. Call me crazy, but beyond my own encounters with the problems I have read over and over, watching my dying father request possibly what may have had a hand in killing him has changed me.
